5 Quick and Chic Healthy Breakfasts

We know, we know, your time is gold and you cannot be bothered with cooking breakfast every day. We would also much rather be picking jewelry to go with our favorite tunic that sweat by the stove first thing in the morning. Or sweat at all, for that matter.

And this is precisely why we adore these quick and chic breakfasts that are also (gasp!) so good for you! No sweating required, and not one of them takes more than 10 min of prep (sometimes, once every 2-3 days!) Enjoy these flavorful bites that are perfect to grab and go — and will look great on your Snapchat!

Avocado toast

We’re so fancy… but you already know it! But seriously, this is the easiest and chicest breakfast we know. To smash avocado, slice it in half, remove the pit, then smash the flesh with a fork right in the skin “boats.” Get a nice wholesome whole grain bread, toast it to you liking, and scoop avocado mash right on. Sprinkle with some Himalayan salt, lemon or lime juice, and red pepper flakes. If you feel fancy, add a poached or sunny side up egg on top!

Overnight oats

Another favorite of ours is overnight oats! You’ll make them as fast as you make a sad instant oatmeal, but the result is SO much more Pinterest-worthy and delicious! Grab a half-cup of old-fashioned oats, a half-cup of milk (any milk replacement will do, too), a tablespoon of chia seeds, ½ teaspoon of cinnamon, and a generous tablespoon of applesauce or pumpkin puree. Regulate sweetness with a squirt or two of honey. Just stir everything well in a mason jar, close with a lid, and refrigerate overnight. In the morning, stir again and add fresh berries, flax seeds and whatever else your heart desires. Enjoy the most nutritious pudding of your life!

Granola Yogurt Parfait

This instant breakfast checks all the right boxes: it’s fast, healthy, yummy, and gorgeous! We’ll just grab a box of granola (the simpler the ingredients and the less sugar, the better!), canned pumpkin puree, a banana, and traditional greek or coconut yogurt. All you need to do is layer it away starting with the puree and fruit and finishing with crispy granola on top. It’s perfectly transportable if made in a jar, so you’ll never have to rush out without fuel!

These may take a second longer to make, but they are so worth it! The best part is that you can make it one and eat it for the next few days. Win and win! Take whatever vegetables, greens and meats you have leftover or just sitting in the fridge and chop them into small cubes or ribbons. In a bowl, whisk 3-4 eggs with a dash of milk, salt, pepper and ½ teaspoon of baking soda. Fold in the filling and pour the mass into an oven-safe pan or a muffin tin. Bake for ~12-15 minutes till golden (just enough time to put on some makeup!), sprinkle with some grated cheese and bake for 3 more minutes. Put in a cute bento box. Delish hot or cold!
